Ready for another delicious-looking Fuel My Friday option? British Women's 10m Platform champion Andrea Spendolini-Sirieix is on hand with a personal recipe.
Andrea enjoyed a memorable start to the year, earning her first individual national title at January's British Championships in Plymouth and then following up that success with a maiden senior international gold in the same event at the FINA Grand Prix in Rostock.
She will have to wait for another competition in which to look to build on those triumphs. For now, though, she has picked out a healthy and flavourful recipe for the latest Fuel My Friday - so over to you, Andrea.
This can be a delicious Father's Day lunch for this weekend. It's more fun if you make it with family, but if you wanted to surprise your dad or anyone else important in your life with it, I'm sure they'll love it!
Ingredients
- 400g chicken breast
- Breadcrumbs
- 1 egg
- 1kg potatoes
- 1 courgette
- 10 cherry tomatoes
- 1 red pepper
- 1 garlic clove
- 1/4 onion
- Olive oil
- Sunflower oil
- Parsley
- Salt and pepper
Method
- Wash the potatoes and cut them into cubes, adding olive oil, a little parsley and salt and pepper.
- Put them in the oven for 30 minutes on 200 degrees, gas mark 5.
- Cut the chicken breast into thin slices.
- Add some breadcrumbs to a plate.
- Whisk the egg and place a chicken strip onto it, then place it in the breadcrumbs and cover the whole strip. Do this for all of the chicken strips.
- Cut the vegetables (courgette, red pepper and cherry tomatoes) into small pieces and add them to a tray.
- Cover them in olive oil, salt, pepper and parsley and put them in the oven for 25 mins (with the oven still at 200 degrees, gas mark 5).
- Add some sunflower oil to a pan and cook each slice of chicken until they are golden brown and cooked through.
- Put everything together and voila! A delicious Father's Day lunch.
