For this week's Fuel My Friday James Guy serves up his Greek chicken meatball recipe - a healthy alternative spin on one of my favourite family dinners.
Ingredients:
- 10 ounces frozen spinach (chopped)
- 1 1/2 pounds ground chicken breast
- 3 cloves garlic (grated or minced)
- 1 extra large egg
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 6 tablespoons feta cheese (crumbled reduced fat)
- 2 ounces breadcrumbs (whole wheat bread, ground into, 1 cup*)
- 1 teaspoon olive oil
Method:
- Get that oven preheated to 200 degrees!
- Defrost the spinach according to package directions. I do this first thing in the morning before I hit the gym, so that it’s ready for dinner
- Once defrosted use your hands and squeeze all of the water out of the spinach and chuck it in a large bowl
- Grab all the remaining ingredients and throw it all into the bowl with the spinach. Get your hands stuck in and mix it all together
- Next step is to make the balls! Form the mixture into 24 meatballs and place them onto a plate
- Grease a baking sheet with the olive oil. Place the meatballs on the baking sheet and bake in the oven, usually takes 15-18 minutes until a beautiful light golden colour
